Basic information

For the Lamb chops:
- 800 gr Lamb Loin from local lamb
For the marinade:
- white wine, different aromatique herbs (rosemary, laurel, sage, thyme), black pepper in grains, juniper, garlic
Vegetables:
- 8 green asparagus
- 4 carrots
- 4 zucchini
- some tomatoes confit to garnish
- rosemary oil to baste
Preparation:
Lamb chops:
Place the lamb loin for 6 hours in the marinade. Then, remove the meet and let it rest for another 1 hour.
Grill the lamb loin on all sides on a hot grill. Then put it in a pan and let it rest for approx. 5 minutes. The lamb should be medium rare.
Vegetables:
Cook the vegetables in hot salted water for approx. 20 min. (or cook in the oven by small temperature) Take them out of the water and cut the carrots and the zucchini in small cubes. Baste the vegetables with some rosmary oil.
Lay lamb and vegetables on a plate, garnish with tomatoe confit.
